1 c. fresh whole
grain corn meal
1 c. whole grain
corn flour
1 c. water
½ t. salt
¼ c. grapeseed oil
(optional, for more tender crispy chips)
Mix ingredients in food
processor attachment. Add either hard white wheat flour, more corn flour
or black bean flour until mixture sticks together and spins around the
bowl of the processor. Let dough rest for a few minutes.
Form small dough balls
and press/cook on pre-heated tortilla press or flat bread maker. Set aside
and cut into triangles. Fry in hot oil (or bake for fat free or reduced
fat version) and sprinkle lightly with salt.
